Pork ribs are smoked over local sea grape wood until
deliciously tender and glazed with a sweet sauce.

A seasoned beef brisket that is slowly cooked for
at least ten hours. The brisket is so tender that
you don't really need teeth to eat it. It is glazed
with a sweet sauce.

A delicious filet of catfish that is dusted in seasoned
flour and pan-fried until golden brown.

Soft Shell Crab
Whole soft shell crabs are dipped in an egg batter,

Hot Tamales
Delicious pork mixture wrapped in a corn shuck and steamed.

Crawfish Pie
Tender crawfish tails blended in a special sauce and
baked in a pie. (The pies are individual servings.)

Dirty Rice
A mixture of seasoned rice and meat that is usually
served as a side dish - or not. It is called “dirty
rice” because when the meats and seasonings are mixed
with the rice, it looks “dirty”.

Potato Salad
A simple, but very tasty potato salad made with
mayonnaise and mustard.

Cole Slaw
Shredded purple and green cabbage mixed with a creamy
sauce.

Poboys
(sandwiches made on French bread)

Catfish Poboy
A delicious fried filet dressed with tartar sauce,
remoulade sauce, and topped with Coleslaw.

Brisket Poboy
The bread is brushed with a sweat BBQ sauce and piled
high with tender beef brisket. We like to put
coleslaw on top.

Cowboy Special
The bread is brushed with a sweat BBQ sauce and
layered with dirty rice and tender beef brisket.

Soft Shell Crab
Three soft shell crabs are piled onto the bread and
dressed with tartar sauce and remoulade sauce for a very
tasty sandwich. (The crabs are fried to order.)
